Favourite ingredients – bananas
I posted the picture and fell asleep. These are
my days lately. Here’s my return, though, to explain this spectacular picture
from the Isle of Santo Antão of Cape Verde, the primary fruit and vegetable
supplier of the archipelago.
Today: bananas
What terrifies me the most when working with bananas? That they aren’t ripe enough!
Where do I get bananas from? My favourite bananas are the small Sri Lankan ones. I dream of going to Ecuador someday to taste the famous local bananas!
Why do I love them? They’re useful and tasty – from sweeteners to toppings.
How do I use them? I love them in vegan desserts (usually, cookies and pudding types), but they are spectacular in ashta, too.
